Leftovers can be kept for three to four days in the refrigerator, but you must be sure to eat them within that time. If you don't think you'll be able to eat leftovers within four days, freeze them immediately. That’s because after the food is cooked and allowed to cool is the time when you run the risk of bacterial contamination. The worst thing you can do is leave it out in the kitchen uncovered for a day or two, then warm it up just a little bit before you eat it – it’s a sure way to make yourself ill. But if you follow some simple guidelines, and have an understanding of why fast food goes off, you’ll be able to "waste not, want not" when it comes to your favourite take away cuisine.
