Knives are professionally sharpened on a slow speed, (90 rpm) Swedish made whet ceramic stone machine. Knives are held in a jig to enable accurate hollow ground edges. They are then honed on a quality leather wheel attached to the machine. Benefits - No heat - Less steel removal - Long lasting edge. Serrated knives are sharpened on diamond and leather.
